Garlic Mashed Cauliflower

Garlic Mashed Cauliflower is a perfect substitute for mashed potatoes when you need to add more vegetables into your diet... don't we all! And it's a great way to use imperfect cauliflower. Who cares if there's a bit of discoloration on one tiny piece if you're only going to steam it and mash it up? It's so simple and delicious, you'll wonder why you haven't been cooking cauliflower like this forever!

1 head cauliflower

2 Tablespoons milk

2 teaspoons olive oil

2 Tablespoons butter

1/4 cup grated Parmesan

2 cloves garlic

1/2 teaspoon salt

1/8 teaspoon pepper

Cut cauliflower head into smaller florets. Cook in boiling water for about 10 minutes or until soft.

Drain well. Pat cauliflower with a towel until very dry. Transfer to a food processor or blender.

Pulse the hot cauliflower until softened but chunky. Add milk, oil, butter, parmesan, garlic, salt and

pepper. Process until smooth. Serve immediately. Add additional butter, salt or

pepper to taste. Sprinkle with fresh herbs if desired.
