Apple Crisp

Perhaps you’re looking for a dessert to make this holiday season that’s special, but not too heavy

or rich. Apple Crisp is a perfect solution! And imperfect apples are perfect for such a dish since you're only going to chop them up and bake them anyway. We used these funky looking Honeycrisp apples, but any variety will do.

Fruit Filling:

4 apples, sliced

juice of 1/2 lemon

1/2 cup coconut sugar

or regular sugar

2 Tbsp. flour

Topping:

1 cup whole wheat flour

1/2 cup rolled oats

1/2 cup coconut sugar

1/2 tsp. cinnamon

1/4 tsp. salt

1 stick of butter

Vanilla frozen yogurt or ice cream (optional)

Preheat oven to 350 degrees. Cut apples into thin slices or bite sized chunks. In a large bowl, mix apples with lemon juice, sugar and flour. Spray six ramekins or one pie plate with non-stick spray. Divide apples into baking dishes. In a separate bowl combine topping ingredients (except for butter). Mix well and divide topping evenly over apples. Cut butter into small pieces and spread evenly over topping. Place ramekins on baking sheet and place in oven. Bake for 30 minutes, checking halfway through. If the top appears to be browning too quickly, cover with foil. Cool slightly before serving. Top with vanilla ice cream for an extra special treat. Serves 6.
