Roasted Beet Salad

These might be the ugliest beets we've ever seen! But cut them open and you'll discover that they are gorgeous on the inside! Our lucky customers are all getting some of these perfectly imperfect golden beets today in their boxes. Not sure what to do with them? That's where we come in! Here's one delicious and simple way to prepare them.
ROASTED BEET SALAD
Ingredients
* 3 to 4 beets, washed
* 2 Tablespoons olive oil
* 1 Tablespoon apple cider vinegar
* 2 teaspoons pure maple syrup
* 1 clove garlic, minced
* 1/4 teaspoon salt
* 1/4 teaspoon pepper
* 4 cups mixed greens
* 1/2 cup crumbled feta or goat cheese
* 1/2 cup candied pecans
Directions
Wrap beets in foil. Bake at 375 degrees for one hour. Remove from foil and let cool. Then peel the skin of the beets with a knife or a vegetable peeler. Cut each beet into 8 wedges.
In a medium bowl combine oil, vinegar, syrup, garlic, salt and pepper. Whisk to combine. Add beets and toss well. Set aside.
In a large bowl add the salad greens. Top with beets, feta and candied pecans. Spoon more of the dressing over the salad.
