Pineapple & Hot Pepper Salsa


All the bright colors and fresh flavors in this week's box have me feeling like it's summer over here, even though it's still grey and cold here in the CLE. Make this beautiful salsa this week and you'll feel it too. Maybe if we start making summer food, summer will actually come!

The sweetness of the pineapple and citrus combine perfectly with the heat of the peppers. This salsa is the perfect snack with chips, would be a dream in your fish taco, or would be off the charts on top of grilled chicken. It's the perfect use for so many of the items in this week's box and it's so easy to make.

Pineapple & Hot Pepper Salsa

1 cup grape tomatoes, quartered

1 cup pineapple, chopped into bite sized pieces

1/2 cup onion, chopped

1/2 cup fresh banana pepper (the yellow one), diced

1 Tbsp. chili pepper (the red one), minced (or more if you like heat)

Juice of half an orange, lemon or lime

1 Tbsp. cilantro, chopped

1/2 tsp. salt

Combine all ingredients in a bowl and mix well to combine. The longer it sits, the better it gets!

It's that simple to transform "imperfect" food into a perfect dish and to transform this lingering drab winter into a bright spring day.
