Grilled Eggplant Caprese Pizzas


Another week has flown by and we are really excited about the warmer weather over here at Perfectly Imperfect Produce. The change in seasons means a change in produce and we are really excited to have some new items popping up. Personally, I love blood oranges in a salad or margarita, and the strawberries in the box this week were so beautifully red and really juicy! I picked the eggplant and tomatoes to work with this week for a different spin on an Italian favorite. I wanted to pull out the grill this week because of all the sunshine, and that made this meal come together really quickly. The eggplant acts as a pizza crust which gives you a lighter carb meal and feels fresh as the days start to get warmer. You can finish these pizza bites in the oven or directly on the grill, I just finished mine in the oven because I wanted that nice broiled color, but either way is great. Use some mozzarella and your favorite marinara sauce to bring the dish together. I hope you enjoy!

Grilled Eggplant Caprese Pizzas Serves 4 Ingredients: 1 Perfectly Imperfect Eggplant, sliced into half-inch slices 1 Package of Perfectly Imperfect "cabernet" cherry tomatoes, halved 5 slices of fresh mozzarella, ripped into pieces 1/2 cup marinara 1/4 cup fresh basil, sliced into ribbons 2 Tablespoons fresh balsamic vinegar or glaze salt and pepper to taste

Directions: 1. On a medium-high grill, lay slices of eggplant and let cook on each side for 2-3 minutes, or until dark grill marks appear. 2. Here is where you can leave the slices on the grill, or transfer to baking sheet. Top each slice with a spoonful of marinara, spreading it out like pizza sauce over the dough, add 2-3 pieces of mozzarella, a few halved tomatoes, and salt and pepper. 3. Either close the lid on the grill for 2-3 minutes, or broil on high for 5 minutes, until cheese is melty and slightly browned. 4. Once removed from the heat source, drizzle the pizza bites with fresh balsamic and the ribbons of basil. Serve with a side salad or even some pasta! Enjoy!
