Asian Chicken Salad on Zucchini "Crackers"


Happy Thursday friends!! I'm just going to say it, this week's box ROCKS. It's so colorful, full of beautiful local vegetables and I am so jazzed about this recipe! Frankly, it's been too hot to cook. Am I right!? I want fast easy meals that I can whip up without turning the oven on and I want them to be delicious. Am I asking for too much? No! The zucchini and squash are seriously gorgeous. I want to peel the yellow squash and use it as a wallpaper in my house. Kidding....sort of. I personally love raw zucchini, the crunch is good and the flavor is mild, so using thinly sliced rounds as "crackers" really hits the spot. This recipe is paleo and low carb, works really well as an appetizer, a snack for the pool, or for dinner with a salad on the side. I also used some Perfectly Imperfect carrots from last week's box and the fresh cucumbers from this week's box to bulk up the salad and add a good crunch! I'm always after some good texture in my chicken salad!

Asian Chicken Salad on Zucchini "Crackers" Serves 6 Ingredients 1 Perfectly Imperfect zucchini, sliced into thin rounds 1 Perfectly Imperfect squash, sliced into thin rounds 1 Perfectly Imperfect cucumber, diced 2 Perfectly Imperfect carrots, diced or shredded 2 cups shredded cooked chicken breast, rotisserie is a great option here 2 Tablespoons almonds, chopped 1/4 cup fresh cilantro, chopped 1 teaspoon sesame seeds Dressing 1/4 cup avocado oil mayonaise 1 Tablespoon sesame oil 1 Tablespoon sriracha 1 Tablespoon rice wine vinegar 1 Tablespoon soy sauce

Directions 1. In a small bowl, combine all ingredients for the dressing, mixing until well combined. If you like it spicier, add more sriracha. 2. In a large bowl, combine all salad ingredients, add dressing mixture, and stir. Chicken mixture should be covered in dressing thoroughly, but not swimming in it. Season with salt & pepper to your taste. 3. Scoop spoonfuls of salad mixture onto your zucchini & squash "Crackers", sprinkling with any remaining almonds, cilantro, or sesame seeds for garnish. 4. Serve for dinner with a large salad, grilled corn, or enjoy as an appetizer at your next pool party! These little bites are packed with bright flavor, you might not be able to share!
