Spicy Sesame Mandarin Salad


Welcome to September, PIP family! As we are embracing the last few weeks of summer, a fresh and vibrant salad felt more than appropriate with this heat wave we've been experiencing! This week's box has a ton of variety! Some things passed around included carrots, peppers, tomatoes, jalapenos, lettuce mix, radishes, squash, berries, and other bits of odds and ends. One of the goals of this blog is to use as many ingredients from the week's box to make something easy for your week, and we think this salad will do the trick.

Growing up, my mom used to make this chopped salad out of a bagged mix with a sesame dressing, canned oranges, some shredded carrots, and crunchy noodles. This was a hit with all my friends and she used it as a staple for many of our family cookouts. So today, I'm sharing the Perfectly Imperfect version, and making a quick homemade dressing to spruce it up! If you don't like spicy- feel free to either omit the jalapenos, or remove the inner white stem & seeds for a less spicy version- you choose! Spicy Sesame Mandarin Salad Serves 4-6 Ingredients Salad 1 Perfectly Imperfect bag lettuce mix 2 Perfectly Imperfect mandarin oranges, peeled, and sectioned 1 Perfectly Imperfect jalapeno, sliced 2 Perfectly Imperfect carrots, peeled thinly 1 Perfectly Imperfect bell pepper, sliced thinly 1 scallion, thinly sliced 1 tsp black sesame seeds 1/4 cup chopped fresh cilantro.

Dressing 5 tablespoons rice wine vinegar 2 Tablespoons soy sauce 2 Tablespoons sesame oil 2 Tablespoons olive oil 1 tsp sesame seeds 1 tsp cilantro Directions 1. In a large bowl arrange the lettuce, topped with all of the veggies, sesame seeds, and cilantro. 2. In a smaller bowl, combine all salad dressing ingredients with a whisk, or pulse in a blender. 3. Divide into serving dishes, or toss salad to combine with dressing, and enjoy!
