Asian Cabbage Slaw

Did you get a gorgeous, local, organic cabbage in your box this week? How lucky are we, to be able to rescue produce from a local northeast Ohio farm. I'm so excited to create something delicious with it!

My mom used to buy the bagged chopped salad mixes at the grocery store, you know what I'm talking about, a mix of chopped lettuce and cabbage, some toppings, and a dressing, all ready to go. The Asian Chopped Salad is still a favorite of mine, and I knew I wanted to recreate that salad with this weeks Perfectly Imperfect Veggies. I love using as many veggies from the box as I can and adding the crunchy carrots, sweet zucchini, and a little bit of the under-ripe mango (perfect for a sweet crunch), made this cabbage slaw a winner. The dressing is simple, and if you don't like a super dressed salad, drizzle it over the top when serving, but I prefer to let mine marinate in the dressing for a little while before eating! It's up to you. Let's dig in!

Asian Cabbage Slaw serves 4-6 Ingredients 1/2 a head Perfectly Imperfect cabbage 1 Perfectly Imperfect zucchini 1 Perfectly Imperfect mango 1 Perfectly Imperfect carrot 1/4 cup fresh cilantro 1/4 cup roasted peanuts Dressing 1/4 cup red wine vinegar 1/4 cup olive oil 1 Tablespoon sesame oil 1 tsp. fresh or dried ginger 2 Tablespoons honey 1 teaspoon sesame seeds

Directions 1. Whisk together ingredients for dressing. Set aside. 2. Thinly slice cabbage and add to a large bowl. Thinly slice the rest of your veggies. I used a mandolin, but you can use a sprilizer, or just thinly slice with a knife. You want everything to be roughly the same size. Peel the outer skin of your mango, and make 4 cuts off of the inner pit, slice the fruit into similar sized pieces as your veggies. 3. Toss all veggie mixture with dressing, cilantro, and roasted peanuts. Serve as is, or let sit for 30 minutes to absorb the flavors! I like to eat this as a side dish with dinner, or add shredded chicken to salads for lunch prep for the week!
