Sweet Potato Fry-Day!

The secret to a successful Friday is an Organic Perfectly Imperfect Produce box, and a big ol' plate of these Sweet Potato Oven Fries! If you've been wanting to make the perfect oven fry, this recipe will do the trick. Season sliced, fresh sweet potatoes with olive oil, salt and pepper. Be patient while they bake, giving you some time to whip up an addicting dipping sauce, and then feast!


These fries are getting dunked in a sweet and spicy sesame aioli, but also work with the classic ketchup, and also a favorite of mine- honey mustard. What is your favorite dipping sauce? The secret to these fries is flipping half way through cooking, making sure each side gets crispy and golden brown! Let's dig in!
Sweet Potato Fries with Sweet & Spicy Sesame Aioli Serves 2
Ingredients 2 large Perfectly Imperfect Organic sweet potatoes 1 tablespoon olive oil
salt & pepper


Aioli 1/3 cup mayo 1 tablespoon sriracha 1 tablespoon sesame oil 1 tablespoon honey 1 tablespoon nutritional yeast (optional) salt & pepper to taste


Directions 1. Preheat oven to 425. Scrub potatoes and dry. Line a baking sheet with parchment and set aside. 2. Slice sweet potato into half inch slices, and then into fries. Toss the cut fries evenly in olive oil, and salt & pepper. Line on baking sheet and bake for 20 minutes. 3. While sweet potatoes are baking on the first side, mix ingredients for dipping sauce together and pour into a serving dish. After 20 minutes pass, flip the fries and bake an additional 10 minutes, until golden brown on the other side! Serve hot with aioli on the side and enjoy!
