Green Beans with Lemon, Garlic & Parmesan


If you're feeling lucky and looking for green this month, we've got lots of green beans to share with you this week in both our organic and conventional boxes! Talk about a pot of gold! Adding some fresh lemon zest, garlic and salty parmesan cheese really takes your average veggie side dish to a whole other level. If you're like me and like a little heat, add a pinch of chili flake.

The secret to this recipe is simmering the green beans in a small amount of water until the water is gone, then letting the green beans get crispy in the hot pan before tossing in the sauce. This adds crunch and a layer of toasty flavor. Let's dig in!

Green Beans with Lemon, Garlic & Parmesan serves 2 Ingredients 1 bag Perfectly Imperfect green beans 1 clove garlic, minced 1/2 lemon, zested & juiced 1 tablespoon olive oil 1 teaspoon chili garlic paste or a pinch of red pepper flake 1 tablespoon parmesan cheese, grated 1/4 cup water Salt & Pepper to taste

Directions 1. Trim the ends of the green beans and give a good rinse. Add to a nonstick skillet with 1/4 cup water and boil until water is gone. 2. While the green beans are cooking, mix the rest of your ingredients for the sauce. Set aside. Turn heat to medium-high and let green beans sauté in the now dry skillet, not tossing too often to get some tasty char marks on the outsides of the green beans. 3. After 3-5 minutes, remove the pan from the heat, dump sauce over beans, and quickly toss to evenly coat. Serve immediately with an additional sprinkle of parmesan! Enjoy.
