Cabbage and Vegetable Soup


Growing up, my mom used to make this big pot of cabbage soup whenever she felt like she needed a reset in her nutritional goals. I'm not one for diets these days, but I am a fan of healthy foods and whether this soup has cleansing magic or not, it's just really delicious. The flavor base is made of fresh ginger and garlic which are always a plus if you're feeling a little under the weather. If you're fearing a wee bit of a headache post weekend celebrations, make a batch of this soup and you'll be back to your magical self, in no time. With St. Patricks Day on the brain, we have a ton, and I mean a ton, of cabbage. Be sure to catch us out at the Cleveland St. Patrick's Day Parade biking through the route with cabbage, carrots and potatoes in tow that will be donated to St. Patrick's Cathedral's food pantry after the parade.

There are lot's of delicious soup veggies in this week's box including some tomatoes, cabbage, carrots and celery. If you didn't get tomatoes, feel free to use canned diced tomatoes if you have them in your pantry! Let's get soupy!

Cabbage and Vegetable Soup Serves 6-8 Ingredients 1/2 head Perfectly Imperfect cabbage 2-3 Perfectly Imperfect carrots 2-3 stalks Perfectly Imperfect celery 1 pint Perfectly Imperfect grape tomatoes 1 tablespoon fresh ginger, minced or grated 2 cloves garlic, minced or grated 1 tablespoon oregano 4 cups broth, chicken, beef or veggie s & p to taste Directions 1. Dice carrots and celery, halve grape tomatoes and thinly slice cabbage and add to a large soup pot. Sauté over medium high until veggies are soft and slightly caramelized and brown. 2. Next, stir in spices- ginger, garlic, oregano, a heavy pinch of salt and pepper, and evenly combine. Let herbs sweat into veggies for 2-3 more minutes, then add stock. 3. Bring soup to a rolling boil and turn to low, covering, and simmering lightly for 30 minutes. 4. Serve with crusty bread smothered in salty butter for dipping, and enjoy!
