Sweet & Sour Chicken

Summer is in the air and we are so excited for you to get this week's box full of colorful fruits and veggies!
If you follow our blog each week, you know we do our best to provide you with a quick, healthy, and delicious recipe featuring one or more ingredients from the box, but this week, we really think we nailed it with using both veggies and fruits to make this delicious take on a favorite take out, Sweet & Sour Chicken!
Dice up colorful mini peppers and pineapple, and sauté them with diced chicken. We squeezed our oranges to add to an easy pantry based sweet and sour sauce! If you have any leftover broccoli or green onions, go ahead and add those in too, you can never have enough veggies in one bowl! Serve over rice or cauliflower rice and you'll have a weeknight takeout hit. Let's dig in!
Sweet & Sour Chicken serves 4 Ingredients 1.5 lb chicken, cut into 1 inch pieces 1 pineapple, large dice 1 bag mini peppers, large dice 1 egg 1-2 green onions, sliced. 1 T soy sauce 2-3 T arrowroot starch or cornstarch 1 T cooking oil


Sauce 2 oranges, juiced 2 T soy sauce 2 T rice wine vinegar 2 T tomato paste (or ketchup) 1 T grated ginger (optional)

Directions 1. In a large skillet, heat cooking oil over medium high heat. Combine diced chicken with 1 T soy sauce and the 2-3 T arrowroot starch, add to the pan. Sear chicken for 3-4 minutes each side before stirring often, as you want the edges to get crispy and crunchy, like your favorite take out chicken. 2. Once chicken has been seared several minutes on each side, add peppers & green onions, and sauté for 5 minutes, until veggies are softened and golden brown. 3. Combine sauce ingredients, and pour over chicken skillet, adding pineapple and turning the heat to low. Simmer on low for another 5 minutes, until sauce is thick and glaze like and the pineapple is warmed through. Sprinkle with additional green onions and sesame seeds if you have them on hand. Serve with steamed broccoli and rice! Enjoy!
