Creamy Garlic & Spinach Chicken


Hi Friends! Another week has just flown by and here we are again, with our recipe creation hats on! I get asked a lot how we come up with something new each week and I have to give credit to the surprise element of the box! One of my favorite parts of the whole process is never knowing what we get to rescue each week! Aubrey here, and I get a box randomly just like all of our customers. I treat it like a Chopped box each week, trying to use as many of the ingredients in the box as possible, keeping it fairly simply, but very delicious! I try to base recipe decisions on if we've used one of the ingredients recently, is it time to do sweet or savory, a salad or a main entree! Just a little behind-the-scenes into the craziness that is my development mood! Do you have any requests? I'd love to hear them!

I'm hoping this week is the last of the chilly winter winds, don't you agree!? I'm ready to retire comfort food recipes for the season and I feel like this is the perfect send off to everything creamy and cozy. This chicken recipe uses the fresh spinach we talked so much about last week, from Morningside Farm, a little cream and a lot of garlic. It's packed full of flavor and comes together quickly! Let's dig in!

Creamy Garlic & Spinach Chicken Serves 3-6 Ingredients 3 large chicken breasts, cut in half lengthwise 1 bag Perfectly Imperfect organic spinach 3 cloves garlic, minced 1/2 cup chicken stock 1/4 cup half and half 1 tsp chili flake (optional) 1 T olive oil s&p to taste

Directions 1. In a large skillet, add olive oil and turn heat to medium-high. Season and sear chicken breasts 4 minutes per side and remove from pan. 2. Turn heat to medium-low and add minced garlic and chili flake, lightly stirring for 2 minutes or so, ensuring the garlic doesn't burn. Add chicken stock and bring to a low simmer. Add handfuls of spinach at a time, stirring, allowing it to wilt. It will cook down significantly. Pour in the half and half and season with salt and pepper. 3. Add chicken back into the creamy spinach sauce and simmer on low for 5-10 more minutes, until sauce is thick, and chicken is cooked through. Serve with rice or pasta, and a side salad. Enjoy!
