Perfectly Imperfect Local Summer


It's summer, and that means growing season is in full swing here in Ohio. We love sharing local tips and tricks from our farmer friends, as well as their seconds or B crops.

This week, you may have received some blueberries from Blue Jay Orchard in Hiram, OH. These berries are small and tart, perfect for baking, but wont last long enough on the vine to grow to maturation due to the expecting weather. We were happy to scoop them up and share them with folks like you to use them further! Have you seen our Blueberry Muffin Top Cookies? This recipe is so perfect for utilizing these precious berries! Blueberry Muffin Top Cookies makes 24 Ingredients 1 cup Perfectly Imperfect blueberries 1 Perfectly Imperfect banana, ripe, & mashed 1.5 cups almond flour 1 egg 1 tablespoon maple syrup (or honey) 1 tablespoon almond milk (or any milk) 1 tsp cinnamon 1/3 cup peanut butter (or any nut butter) 2 tablespoons melted butter (or avocado, coconut, veggie, canola, or any light oil) 1/4 tsp baking soda pinch salt

Directions 1. Preheat oven to 350. Line a baking sheet with parchment.2. In a large bowl, whisk egg, almond milk, maple syrup, butter and peanut butter until well combined. Next, stir in cinnamon, salt, baking soda and almond flour, until a batter is formed.3. Fold in your blueberries and scoop 24 tablespoon sized dollops onto your baking sheet. Bake for 8-10 minutes and allow to cool for 5 before moving from the pan. Store cookies in a cool dry place, or in the refrigerator. Scoops of dough freeze really well for future baking, also! Enjoy! On to other local farms, we get a lot of our goods from Drift Hills Farm, Wooster OH. You may see lettuce and cucumbers from them this week in your box!
