Summer Veggie Pizza

Hi friends, pull up a chair. It's pizza night! Have you seen that cute movie, Ratatouille, with the adorable little animated chef rat? We are channeling those vibes with this summer veggie pizza! This recipe is perfect for fresh veggies or any leftover veggies you may have. I often find myself cranking on the grill in the evening and getting dinner ready, but also throwing some extra veggies I have in the fridge on there for future meals. They're perfect for a burrito bowl, mixing into scrambled eggs or even adding to the top of a pizza. The extra flavor is amazing.

You can make your own pizza dough by combining one cup of plain Greek yogurt with one cup of self rising flour, or you can purchase a pre-made dough at your local grocery store! Either way works! Ratatouille is a traditional French recipe, featuring seasonal veggies, most of which happen to be in our box this week! Tomatoes, eggplant, zucchini, squash, peppers, oh MY! Let's dig in. Ratatouille Pizza Serves 2-4 Ingredients 1 pizza dough 2 cups assorted veggies, eggplant, tomato, zucchini, squash, peppers, all sliced thinly 1 cup pizza sauce 1 cup fresh mozzarella 1/4 cup goat cheese 1 clove garlic, minced fresh basil

Directions 1. Preheat oven to 425. 2. Roll out dough and spread with an even layer of pizza sauce. Sprinkle half of the cheese and layer with veggies. Sprinkle the remaining cheese and bake at 425 for 20 minutes, or until crust is golden brown and cheese is melted. 3. While the pizza bakes, mash goat cheese with garlic. Once pizza is cooked through, pull from oven, dollop with garlicky goat cheese and sprinkle with basil. Enjoy!
