ABC Muffins


With Perfectly Imperfect Produce, helping your family get into a healthier routine this back to school season is as easy as ABC! Literally!

Today we're sharing these "ABC Muffins" made with Apples, Bananas and Carrots. They are the perfect way to add micronutrients into a delicious school snack, a simple breakfast on the go for busy mornings, or a not-to-sweet dessert. It's so yummy the kids won't even realize it's good for them!

Thanks so much to our loyal customer Chrissy Walters for sending us her recipe and allowing us to share it on Fox 8's New Day Cleveland! We love seeing how you all are using our "ugly" produce and getting creative in the kitchen to turn "imperfect" fruits and veggies into perfectly beautiful meals.

Chrissy's ABC Muffins are the perfect use for the apples we rescued this week from our friends at Quarry Hill Orchard. They're a little bruised on the outside but sweeter than candy on the inside. She was brilliant to sneak in those two legged carrots from Drift Hills Farms and some overripe bananas from this week's box for added nutrition. Since we're a local business based right here in Ohio, we are able to rescue produce from local farms and help them get paid for all their hard work so that none of their crop goes to waste!

ABC Muffins

/Apple Banana Carrot Muffins/

2 bananas 1 large handful of carrots 2 apples (peeled and cored) or 2 small zucchini 3 eggs 1 tsp. vanilla 1/4 cup oil (I used coconut oil) 3/4 cup applesauce 1 c sugar (I used coconut sugar) or 1/2 cup honey 3 cups flour (I used almond flour) 1 tsp. baking soda 1 1/2 tsp. baking powder 1 tsp. salt 2 tsp. cinnamon Put bananas, carrots, apples or zucchini in a food processor and pulse until chopped finely. Spray muffin tin and/or loaf pan or use muffin cup liners. Combine all ingredients in a large mixing bowl and stir well with a stand or hand mixer. Spoon into muffin cups or loaf pan. Bake in muffin tin for approximately 20-25 min (50 minutes for a loaf) at 375 degrees. Makes one loaf and 12 muffins. Or 24 muffins.
