Spaghetti Squash Burrito Bowls


Hi PIP, family! It's another beautiful week and we've got another beautiful box! This week we rescued eggplant, summer tomatoes, apples, plums, parsley, spaghetti squash, carrots, peppers, celery, beets and so much more! We aren't quite ready to say goodbye to the summer weather, but squash season is upon us. Let's dip our toes into squash season, shall we? We're keeping the warm summer flavors alive with hints of burrito inspired flavors, with that comforting layer of spaghetti squash.

Cooking a spaghetti squash can seem intimidating, mainly because of the hard exterior making it difficult to cut. A pro tip I can recommend is piercing the skin all the way around the squash in a circle, microwaving it for 5 minutes, letting it cool enough to touch, and cutting it in half around the perforated mark. Then, you can roast the squash halves at 400 for 50 minutes and shred, or microwave them for 10 minutes and shred. The method is up to you! This recipe is customizable- you can add ground turkey or shredded chicken, or keep it vegetarian. Add beans and corn, peppers, tomatoes and your favorite salsa or enchilada sauce. I love that you can bake the mixture in the spaghetti squash shell to make the perfect burrito "bowl". Let's dig in!

Spaghetti Squash Burrito Bowl Serves 2-4 1 Perfectly Imperfect spaghetti squash, cooked and shredded 1 Perfectly Imperfect corn on the cob, cut off the cob 1 Perfectly Imperfect pepper, diced 1 cup black beans, drained and rinsed 1 cup diced tomatoes 1 cup shredded pepper jack 1 cup salsa or enchilada sauce 1 T ground cumin 1 T chili powder 1 T garlic powder 1 T salt Cilantro and Sour Cream for Garnish

Directions 1. Preheat oven to 400. Mix shredded spaghetti squash with corn, peppers, tomatoes, black beans and spices. Evenly distribute between the two shells and top with enchilada sauce and the shredded cheese. 2. Bake for 25 minutes, until cheese is melty and golden brown. Top with sour cream and cilantro. Enjoy!
