Perfectly Imperfect Bruschetta
Ingredients
4 medium sized Perfectly Imperfect roma tomatoes, diced small
1 Perfectly Imperfect bell pepper, diced small
2 garlic cloves, minced
½ Perfectly Imperfect medium onion (red or white), diced small
8 oz. fresh mozzarella cheese, diced small
8 fresh basil leaves stacked, rolled and cut into very thin slices
2 Tbsp. fresh parsley, chopped
Dressing
1/4 C extra virgin olive oil
3 Tbsp. balsamic vinegar
1/4 tsp. salt
1/8 tsp. black pepper
Instructions
Prepare all bruschetta ingredients and mix together in a bowl. Set aside.
Mix all ingredients for the dressing together in separate bowl and drizzle on top of bruschetta mixture. Mix to combine.

Enjoy this recipe served on top of toasted fresh baguette slices or zucchini bites!

To make zucchini bites:
Slice zucchini into 1/2 inch thick slices.
Place zucchini slices on a non-stick baking sheet .
Lightly brush zucchini slices with olive oil on both sides. Season with salt and pepper.
Bake in a 375 degree oven, flipping zucchini slices after two minutes. Zucchini should still be firm but tender.
Let slightly cool, top with 1 tbsp of bruschetta mixture and serve!
