Breakfast Buddha Bowl

This week our PIP boxes included all sorts of fabulous fruit! It seemed like the perfect opportunity to partner up with our friend Meghan McCarthy from @cleaneatsfastfeets and creator of Cleveland based, small batch granola company, City Hippie Granola. Meghan used not one but ALL of our fruit including strawberries, banana, peach and mango to create a superb smoothie bowl ideal for breakfast or an afternoon snack.

Perfectly Imperfect Breakfast Buddha Bowl

Ingredients

  • 1 large Perfectly Imperfect mango, peeled and pitted, approximately 2 cups

  • 2 Perfectly Imperfect bananas, peeled

  • 2 cups Perfectly Imperfect strawberries, rinsed (green tops can stay on)

  • 2 small Perfectly Imperfect peaches, pitted, approximately 1 cup

  • 1 cup Ice (or frozen fruit such as mango, peach, cherries, or strawberries)

Optional (Not Really) Toppings

  • City Hippie Granola (Almond Mango, Coconut Lime Pineapple, Jail House Rock, Lemon Blueberry, or Orange Cranberry)

  • Sliced Fresh Fruit (Mango, Peaches, and Strawberries, Oh my!)

Directions

  1. Add all ingredients to a blender.

  2. Blend until completely combined. The final texture should be smooth and thick. Since there is no liquid in this recipe*, you may need to gradually work the ingredients down into the blender using an appropriate tool. Be safe; keep your fingers.

  3. THE MOST IMPORTANT STEP: using a small spoon, taste it and adjust your ingredients as necessary, since every smoothie will be different based on the ripeness and water content of your fruit. Bananas and mango will up the creaminess and thickness, while strawberries (or dates or a dash of maple syrup) will sweeten the deal, and *1/2 cup milk of choice (I like Almond Milk) will transform your Buddha bowl into an on-the-go smoothie.

  4. Pour your blended ingredients into a bowl.

  5. Top with City Hippie granola and more fresh fruit.

  6. Take a picture, post it on The Gram. ;)
