Blood Orange Creamsicle Parfait


Need a simple dessert idea to enjoy this Easter? These Blood Orange Creamsicle Parfaits are fresh and festive and make good use of any fruit you may have received in your Perfectly Imperfect box this week. We’re using the juice and zest from a blood orange (which turns the cream a lovely pastel pink!), but feel free to swap in a navel orange.

Blood Orange Creamsicle Parfait

Prep time: 15 min.

Total time: 20 min.

Serves: 4

Ingredients:

1 cup plain Greek yogurt

½ cup whipping cream

2 Tablespoons honey

zest from ½ Perfectly Imperfect blood orange, plus the juice (about 2 tablespoons)

½ teaspoon vanilla

2-3 cups assorted Perfectly Imperfect fruit, chopped (mango, pineapple, strawberries, etc.)

Directions:

Combine yogurt, whipping cream, honey, orange zest, juice and vanilla in a glass bowl. Using a hand mixer (or a stand mixer with a whisk attachment), beat the yogurt mixture on high speed until it’s thick and fluffy, about 5 minutes.

Divide fruit into bowls and top with cream.
