Tomato Basil Marinara over Zucchini Noodles

Here at PIP we are always trying to come up with new ways to make eating healthy less challenging (and less expensive). Recently, we released our new Perfectly Prepped Box that is loaded with chopped, sliced and diced fruits and vegetables! The boxes change each week and often include different options such as a stir fry kit, spiralized veggies, diced beets, crinkle cut potatoes and more! So, if you love to eat lots of produce but don’t necessarily want to deal with the hassle of prepping them, then this box is perfect for you! This week our Prepped box included zucchini noodles and sliced tomatoes, so we wanted to show you how we're turning them into a delicious meal! This recipe is as as simple as it is beautiful and it's perfect for busy school nights ahead!

Our homemade tomato basil marinara sauce over zucchini noodles combines the delicious tastes of summer with the vibrant flavors of Italy and creates the easiest dinner recipe you’ll make all week!
This dish in particular is loaded with fiber, antioxidants, minimal ingredients and takes less than 30 minutes to make from start to finish. We know it can be easy to simply grab the canned sauce off of the shelf, however this homemade recipe offers not only convenience but is packed with so much taste from fresh wholesome ingredients such as garlic, basil and the freshest produce. Further, when produce is consumed at its peak freshness with minimal processing involved, the nutrients are absorbed more efficiently. Sometimes, less is more. This recipe is proof of this! Homemade Tomato Basil Marinara Sauce Over Zucchini Noodles
Serves 2-3 People
Ingredients:
1/4 c Perfectly Imperfect sweet onion, chopped
2 garlic cloves, chopped
1 Tbsp. honey
2 Tbsp. olive oil
4 PIP small-medium heirloom tomatoes, diced or 4 c PIP cherry tomatoes, sliced
1/2 c fresh basil, sliced into thin ribbons
1 Tbsp. dried oregano
2-3 PIP medium zucchini, spiraled
*Optional: 1 c sliced crimini mushrooms
Dash of salt & pepper
Directions:
Sauté chopped garlic and onion (and optional mushrooms) in a medium saucepan with olive oil for about 3 minutes.
Add in diced tomatoes, dried oregano and honey. Let simmer for about 10-15 minutes.
While tomatoes are cooking, sauté spiralized zucchini for about 8-10 minutes in a separate greased pan.
Stir in basil to tomatoes before serving.
Serve marinara sauce over a bed of zucchini noodles.
Top with freshly grated parmesan cheese, more basil, and/or option fresh lemon zest!
