Apple Crisp Smoothie Bowls
This Apple Crisp Smoothie Bowl is a play on the classic dessert and combines lots of colorful produce into a filling and nutritious breakfast or snack.

A smoothie bowl is typically thicker than a traditional smoothie and enjoyed with various toppings for texture. To play on the apple crisp theme, this smoothie bowl is served with your favorite crunchy granola and more chopped apples. Dried fruit, like raisins or cranberries, nuts and seeds, or nut butters are delicious additions, too.

Frozen bananas are great for adding creaminess to smoothies, but sometimes their flavor can be overpowering. Here, we’re adding a small amount of frozen banana for natural sweetness, but also blending in frozen zucchini, a secret ingredient that makes the smoothie bowl thick and creamy without adding flavor, allowing the essence of apple to shine through. A small handful of kale turns this smoothie apple green.

Apple Crisp Smoothie Bowl

Ingredients:
2 golden delicious apples, cored and chopped
1 cup cubed zucchini, frozen
banana, sliced and frozen
1 small handful kale, chopped (optional)
¼ cup almond milk
¼ cup plain Greek yogurt
½ cup rolled oats
2 pitted dates (or substitute 1-2 tablespoons maple syrup)
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
Optional: protein powder or powdered collagen
Toppings: Granola, chopped apples, dried fruit, nuts or seeds, a drizzle of nut or seed butter

Instructions:
Combine all ingredients except toppings in a large high-powered blender. Blend until very smooth, using a tamper as needed. Taste and add more spices or maple syrup/honey, if desired. Divide between two bowls and serve with toppings. Best served immediately.
