Huevos Rancheros Casserole with Homemade Guacamole

Casserole Ingredients

  • 2 cups fresh PIP cauliflower florets

  • 1 cup fresh PIP tomatoes, diced

  • ½ cup fresh PIP yellow onion, diced

  • ½ cup fresh PIP bell pepper, diced

  • 2 fresh PIP garlic cloves, minced

  • 1 teaspoon salt

  • 1 teaspoon chili powder

  • 1/2 teaspoon garlic powder

  • 1 teaspoon cumin

  • 1/2 teaspoon cayenne pepper

  • 1 pound ground chorizo sausage

  • 6, 8” tortillas

  • 4 eggs


Homemade Guacamole

  • 2 large fresh PIP avocados, halved and pitted

  • 1 teaspoon fresh PIP lemon juice

  • 1 teaspoon fresh PIP lime juice

  • 2 tablespoons fresh PIP cilantro leaves, finely chopped

  • 1/4 cup red onion, finely chopped

  • 1/2 jalapeño pepper stemmed, seeded, and finely chopped

  • Salt and pepper to taste


Guacamole Instructions

  • In a bowl, combine avocados, lemon and lime juice. Mash until smooth. Stir in onion, cilantro, and jalapeños. Season to taste with salt and pepper.



Casserole Instructions

  1. Preheat the oven to 400 degrees F. Spray an 8×8 or 9×9 baking dish with oil spray. Set aside.

  2. Steam cauliflower until fork-tender, about 15 minutes.

  3. While the cauliflower is steaming, place a large nonstick sauté pan over medium heat. Add chorizo sausage to the pan and break into small pieces. Cook until browned, about 10 minutes, then add diced tomatoes, bell peppers, onions and garlic cloves.. Mix to combine. Remove from heat.

  4. Once done, transfer the steamed cauliflower to a blender or food processor and puree until smooth. Add all of the spices and puree once more until combined. Set aside.

  5. Place 3 tortillas in the bottom of the baking dish, next add 1/2 of the cauliflower puree on top of the tortillas and spread evenly throughout. Next add 1/2 of the chorizo mixture on top of the cauliflower puree and spread evenly throughout. Repeat this once more – 3 tortillas, cauliflower puree, chorizo mixture. Use a spoon to create 4 wells in the chorizo mixture then crack an egg into each well.

  6. Place baking dish in the preheated oven to bake for 8-10 minutes, or until the whites of the eggs are cooked through and the yolks are still runny.

  7. Serve with fresh guacamole, chopped cilantro, green onions, fresno peppers, and cheese. Enjoy!
