Peach Summer Rolls

Bring on the local peaches! We rescued lots of perfectly imperfect peaches from our friends at Quarry Hill Orchards in Berlin Heights this week and we couldn’t wait to send them your way! Some may be a little small or a bit bruised, but trust us when we tell you they’re juicy and delicious - a taste of summer!



Speaking of summer, this week we’re making summer rolls, a favorite no-cook lunch, dinner, or appetizer, and the perfect way to enjoy an assortment of fresh Perfectly Imperfect produce. Adding sliced peaches (or any stone fruit you may have received) adds a bit of unexpected sweetness that compliments the savory and tangy dipping sauce. This version happens to be meatless, but you can add cooked shrimp, shredded chicken, or marinated tofu.

Peach Summer Rolls

Ingredients:

Spring rolls:

12 rice paper wrappers

Perfectly Imperfect radishes, thinly sliced

Perfectly Imperfect cucumber, cut into matchsticks

Perfectly Imperfect carrots, cut into matchsticks

Perfectly Imperfect red bell pepper, thinly sliced

Perfectly Imperfect green onions, cut into 3-inch pieces

Perfectly Imperfect peaches, pitted and thinly sliced

Perfectly Imperfect lettuce leaves, shredded

Fresh cilantro and mint leaves

4 ounces rice noodles, cooked, rinsed and drained


Dipping sauce:

3 tablespoons water

1 tablespoon sugar

1 tablespoon fish sauce

1 tablespoon rice wine vinegar

½ tablespoon Perfectly Imperfect lime juice

¼ teaspoon crushed red pepper flakes



Instructions:

Soak rice paper wrappers, one at a time, in warm water for 15-30 seconds, or according to package directions. Transfer to a work surface. Stack assorted vegetables, peach slices, shredded lettuce, fresh herbs, and rice noodles in the center of the wrapper (about ½ cup total). Fold the sides of the wrapper into the center, then fold up the bottom and roll up to the top to seal. Repeat with remaining wrappers.



Whisk the dipping sauce ingredients together in a small bowl. Serve with spring rolls.
