Squash Casserole

This month on From Seed to Spoon, we have been teaching you how to work with winter squash. First we taught you some squash basics, then we showed you how to peel, slice and dice winter squash. Next we showed you how to roast it to create a delicious soup. In our last installment we are sharing Chef Douglas Katz's recipe for Squash Pudding Casserole. Did you know that you can grate winter squash? It looks a little like cheddar cheese, but it's much better for you! Check out the video below and follow along with the recipe to turn the butternut in your PIP box into this tasty dish. It would be a perfect side dish for your Easter feast!

Squash Pudding Casserole

Recipe by Chef Douglas Katz

1 (about 1.5 lbs) Perfectly Imperfect winter squash (butternut, acorn, delicate or spaghetti)

1 Perfectly Imperfect onion, diced

2 eggs

salt to taste

cayenne pepper to taste

cinnamon, orange zest (optional)

1 cup of cream

Preheat your oven to 350 degrees. Grate your winter squash into a large bowl using a cheese grater. Then add the onion, two eggs, two large sprinkles of salt, and a sprinkle of cayenne paper. If you'd like to add additional flavors, you can also add a sprinkle of cinnamon or orange zest. Now stir it all together. Next pour the squash mixture into a small casserole dish and spread it around so it's even. Next pour 1 cup of cream over top. Bake at 350 degrees for 40 minutes uncovered. Sprinkle with parmesan cheese and garnish with toasted squash seeds.

To roast your squash seeds, simply spread them out evenly on a baking sheet. Sprinkle with cinnamon, kosher salt, cayenne pepper and honey. Bake at 325 degrees for 20 minutes. These are perfect to top soups, salads or just to nibble on as a nutritious but tasty snack.

Storage Tip: Winter squash should always be stored on your counter. Not in your fridge. It will keep there for weeks.
