Grilled Patty Pan Squash with Creamy Burrata, Basil & Tomatoes


So excited to be back with you all this week after a beautiful holiday week off! I hope you had a relaxing day/days off with friends and family, enjoying this Ohio sunshine! Loving this week's box! To me it screams summer, and what a reason to bust out the grill. I chose to work with the Patty Pan squash this time, you may not be familiar with it, but it's the yellow or green flower shaped squash in your box! Most have a soft skin that can be eaten, and are just so cute on antipasto platters, hollowed out and stuffed, or paired with other veggies for a bowl of summer goodness.

This time I grilled the squash and added some caprese flavors like tomatoes, fresh basil and creamy burrata. If you're unfamiliar with burrata, you can use fresh mozzarella, but if you look to the left or to the right at the store and see the burrata name, grab it! You'll thank me, I promise! It's fresh mozzarella, stuffed with strips of mozz and heavy cream, so luscious, and when mixed with these veggies, creates a creamy dressing. This bowl can be served right off the grill, warm, or chilled and tossed in vinaigrette. Feel free to add pasta or other grilled veggies to bulk up the meal!

Grilled Patty Pan Squash with Creamy Burrata, Basil & Tomatoes Serves 4-6 Ingredients 3-4 Perfectly Imperfect Patty Pan squash 1 cup small tomatoes

1/4 cup fresh basil leaves 1 ball fresh burrata cheese 1/4 cup pesto 2 Tablespoons olive oil salt and pepper to taste

Directions 1. Preheat grill to medium-high. Quarter squash, spray with non-stick spray, and season with salt & pepper. Grill for 3-4 minutes per side, just until char marks appear and squash softens. 2. While squash grills, quarter small tomatoes, slice basil in thin strips, and mix pesto with olive oil for a dressing. 3. Pull cooked squash from grill, and let cool for 5 minutes. Add to a large bowl with tomatoes, topping with burrata ball, strips of basil, and drizzle the pesto dressing mixture over the top. Sprinkle with salt & pepper and enjoy as a side dish with grilled salmon or chicken, or add pasta to the dish for a main dish.
