Paleo Kohlrabi Apple Slaw

This week you may have received an unfamiliar root vegetable that might resemble an alien. Do NOT be afraid. We're here to help! That's what we do! We send you unique rescued produce and then we show you how to transform it into a nutritious and delicious dish.

Our friend and long time customer Ally Grubba from @platedbyally turned this funky veggie AKA Kohlrabi into a yummy side dish. You might recognize Ally from some of the photos on our website. She and her now husband, Taylor, allowed us to capture them getting creative in the kitchen with our produce. When she's not cooking or working full time, she's teaching yoga. Here's the healthy dish she's making with this week's box!


Here's what you need:

- 2 cups kohlrabi, grated (this equates to about 2, 4" bulbs)

- 2 carrots, peeled (or you can use shredded)

- 1 apple, cut into matchsticks

- 1 jalapeno, seeds removed, diced

- 1/4 cup red onion, diced

Combine all the above ingredients into a large bowl. Next make your sauce.

For the Sauce:

1/2 cup mayo (I use @primalkitchen)

1/4 cup white vinegar (or apple cider vinegar)

1/2 tsp. garlic powder

1/2 tsp. mustard (ground)

1/2 tsp. celery seed

1/2 tsp salt and pepper

Mix sauce thoroughly in a small bowl, add to slaw mix and combine thoroughly

top with green onions (chopped), sunflower seeds, or your favorite protein!
