Vegetable Tian


We’re hoping the beautiful produce in this week’s box will inspire you to make something special for your holiday meals this weekend. With grocery trips few and far between, this recipe is extra simple and calls for a few of the items in this week's PIP box along with just a handful of other ingredients you likely have in your pantry and fridge.

This Vegetable Tian would make a great addition to any entree you plan to serve and elevates basic roasted vegetables into a show-stopping side dish. We’re using zucchini, yellow squash, tomatoes, potatoes and onion from this week’s haul, but you can use any combination you have.

Vegetable Tian

Prep time: 15 min.

Cook time: 45 min.

Total time: 60 min.

Serves: 4

Ingredients:

1-2 Perfectly Imperfect zucchini

1-2 Perfectly Imperfect yellow squash

2-3 Perfectly Imperfect Roma tomatoes

2-3 Perfectly Imperfect potatoes

½ Perfectly Imperfect onion

2 Tablespoons olive oil

1 teaspoon dried Italian herbs

½ teaspoon garlic powder

Salt and pepper

3-4 Tablespoons grated Parmesan cheese

Directions:

Preheat oven to 400 degrees. Spray a small 1 ½ - 2 quart baking dish with cooking spray.

Slice zucchini, yellow squash, tomatoes, potatoes and onion into 1/4-inch thick slices. Transfer to a baking sheet, keeping each vegetable somewhat separate. Drizzle all vegetables with the olive oil and sprinkle with the Italian herbs and garlic powder. Season to taste with salt and pepper; toss to coat. Arrange vegetables vertically in the baking dish, alternating each to create a pattern (add the onion every so often). Cover with foil and bake for 30 minutes. Remove from oven, discard foil and top with Parmesan. Return to oven for 15-20 minutes more, or until potatoes are tender.
