Watermelon and Tomato Basil Salad



This Watermelon and Tomato Basil Salad is the ultimate end-of-summer salad featuring the season's finest, sourced from our local farm partners, perfect for your long weekend picnics and BBQs. It’s very quick to prep and calls for a handful of ingredients and a few pantry staples. With produce this fresh and flavorful, you don’t need much to make a show stopping salad.



Don’t let summer slip away without trying this amazing combination. There is something magical about the sweetness of watermelon paired with the distinct flavors of an in-season tomato, briny feta, and floral basil. It’s a great compliment to grilled meats and seafood, grilled vegetables, corn on the cob, and cheese plates. Be sure to toss it in the vinaigrette right before serving, or serve it with dressing on the side.

Watermelon and Tomato Basil Salad

Servings: 4 to 6



Ingredients:

¼ Perfectly Imperfect watermelon, rind removed and cubed (1-inch)

2 Perfectly Imperfect heirloom tomatoes, cubed (1-inch)

4 ounces feta cheese, cubed (½-inch)

3 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon honey

Large pinch sea salt

¼ cup packed Perfectly Imperfect basil leaves, large leaves torn

Cracked black pepper



Instructions:

In a very large bowl, use your hands to gently toss the watermelon, tomatoes, and feta together. In a lidded glass jar, combine the olive oil, vinegar, honey, and salt; shake. Pour dressing over the salad to taste (do this immediately before serving) and gently toss. Add the basil leaves and cracked black pepper and toss again. Serve immediately.
