PIP Lunchbox


It's back to school season and if you've got kiddos in school, or you pack your lunch for work, we've got some ideas for you! We know it's hard to hide veggies from your kids, but we have faith in a little cream cheese and a tortilla this week! Our boxes are full of goodies; ground cherries (peel the outside and eat the inside), lots of sweet and spicy peppers, tomatoes, zucchini, blackberries, watermelon, string beans, apples and more!

We layered some of our thinly sliced zucchini and peppers on a whole wheat wrap with some other goodies for a pin wheel. You can use whatever veggies you or your kiddos like. Add some deli meat and a slice of cheese if you prefer. It's super versatile and a fun way to eat a "sandwich". Raw zucchini has a really great texture and no strong flavor, so I feel it's one of the best veggies to sneak in for kids. Feel free to peel the skin if they don't want to eat anything green! Cut up fruit and berries make a sweet treat, too! Can you ever beat the classic PB & celery combo? Let's dig in!

PIP Lunchbox Serves 1 Ingredients 1/4 Perfectly Imperfect bell pepper, thinly sliced 1/4 Perfectly Imperfect zucchini, thinly sliced 1/2 cup Perfectly Imperfect blackberries 1/2 cup Perfectly Imperfect watermelon, cubed 1/2 cup Perfectly Imperfect celery, cut into sticks 2 T peanut butter 2 T cream cheese 1 slice cheddar 1 whole wheat tortilla 2 slices organic turkey or ham

Directions 1. Lay the tortilla flat and spread the cream cheese evenly on the wrap. Layer thinly sliced veggies, turkey and cheese. 2. Roll into a tight roll and cut into slices to make the little pinwheels.

3. Fill box with cut up fruit, pinwheels and celery & pb. Enjoy!
